Sunflower Butter Stuffed Dates (Vegan + Gluten-Free)

Ingredients

  • 6 Fresh Medjool Dates
  • 2 - 3 Tbsp Sunflower Seed Butter
  • 1 - 2 Tbsp Choice of Toppings (Optional)

Instructions

  • To prepare your dates, make a lengthwise slit into each date to create an opening for the filling. Avoid completely cutting them into halves. If your dates aren't pitted, be sure to carefully remove the pits. The pit easily comes out without too much pressure or pulling.
  • Using a small spoon or butter knife, fill each date with sunflower seed butter.
  • Sprinkle with your choice of toppings - shaved or chopped chocolate, shredded or flaked chocolate, chopped nuts or seeds. Enjoy!

Notes

Sunflower Seed Butter Alternative: You can use whatever seed or nut butter of your choice - Almond Butter, Peanut Butter, Pumpkin Seed Butter, etc.
Optional Toppings:
In place of chocolate, try Carob Nibs. Carob is a natural alternative to chocolate.

Nuts - Plain or Roasted Pine Nuts or Chopped Walnuts or Chopped Pecans
Seeds - Plain or Roasted Sunflower Seeds, Pumpkin Seeds or Sesame Seeds
