In search of a quick snack, I was actually inspired to make these before my late afternoon workout. Since it’s so easy to reach for snack bars, I’ve been working on eating less processed packaged foods. Each day my goal is to incorporate more wholesome / plant-based foods into my meals.
The recipe calls for simple delicious ingredients:

Sunflower Seed Butter
Your choice of toppings

All about the dates – Medjool dates are my absolute favorite. While being larger than regular dates, they are also a bit sweeter with a caramel-like flavor. Also, they tend to be moist and soft.
Regular dates will work just fine. While there are several varieties of dates, the type more commonly sold in grocery stores are considered Deglet Noor dates.
Pitted or Whole Dates?
For convenience, pitted dates are easier to snack on, as the inside pit has already been removed. Otherwise, you’ll need to slice open the date lengthwise to remove the pit, which is pretty easy to do.

Make These Stuffed Dates Anyway You Would Like
Sunflower (Seed) Butter or any nut-free spread can be used, especially if you are allergic to tree nuts. You can also try Tahini for a mildly nutty and savory flavor.
Creamy or crunchy? It’s completely up to you! SunButter offers their sunflower butter both ways.
For a little variety, 88 Acres makes several seed butters to include Sunflower, Pumpkin and even Watermelon Seed Butter.
Don’t worry – if you don’t have a nut allergy, feel free to use your favorite almond butter, peanut butter, cashew butter or hazelnut spread.
Toppings
Chopped or Shaved Chocolate (Vegan)
*Carob Nibs – Carob is a natural alternative to chocolate. It has a mellow flavor and is less bitter than chocolate.
Shredded Coconut or Coconut Flakes
Chopped Nuts (optional) – Plain or Roasted Pecans, Walnuts, Cashews, Pistachios or whatever you have on hand.
Seeds (optional) – Try sesame seeds, pumpkin seeds, sunflower seeds, pepitas or sprinkle with chia seeds.
Coarse or Flaky Sea Salt (optional) to balance out the sweetness.

Sunflower Butter Stuffed Dates (Vegan + Gluten-Free)
Ingredients
- 6 Fresh Medjool Dates
- 2 – 3 Tbsp Sunflower Seed Butter
- 1 – 2 Tbsp Choice of Toppings (Optional)
Instructions
- To prepare your dates, make a lengthwise slit into each date to create an opening for the filling. Avoid completely cutting them into halves. If your dates aren't pitted, be sure to carefully remove the pits. The pit easily comes out without too much pressure or pulling.
- Using a small spoon or butter knife, fill each date with sunflower seed butter.
- Sprinkle with your choice of toppings – shaved or chopped chocolate, shredded or flaked chocolate, chopped nuts or seeds. Enjoy!
